White Chocolate Macadamia Cookies
These decadent white chocolate and macadamia cookies are the perfect snack when you want something delicious.
Makes: 10 cookies
Takes: 30 minutes
Ingredients
1 cup of brown butter, cold
1 cup brown sugar
1/2 cup caster sugar
2 tsp vanilla extract
2 large eggs
1 egg yolk
3 cups plain flour
1 tsp corn flour
1 tsp baking soda
2 cups white chocolate, chopped
2 cups macadamias, chopped
Instructions
Preheat oven to 210c and line 2 baking sheets.
Beat your premade brown butter and both sugars together and add vanilla, mix for 4 minutes.
Add the eggs and yolk 1 at a time until fully combined.
Add the flour, corn flour, baking soda and salt beating until combined.
Stir in your chocolate and macadamias and mix with your hands, (The mixture should be crumbly) if dough is too crumbly add 1-2 tbsp of water.
Divide the dough into 10 equal pieces and roll into balls (the cookies don’t spread much in the oven so keep them as balls.)
Bake for 8-11 minutes or until golden brown, let them cool for 10 minutes before serving.
