Tomato Garlic Pasta
My quick and easy comforting meal for any occasion. This tomato garlic pasta is always cooked to perfection when you follow my recipe.
Serves: 1
Takes: 10 - 15 minutes
Ingredients
1/2 Red onion
2 cloves of garlic
1 TBSP Tomato paste
1/4 cup heavy cream (Can be substituted for 1/4 cup milk)
1 Serving of pasta
To serve
4-6 leaves of fresh basil
30g Feta
Small drizzle of olive oil
Black pepper to taste
Instructions
Measure out 1 serving of pasta and start cooking it in boiling water. (See tip 1)
While your pasta is cooking, start dicing your red onion and garlic.
Heat a saucepan over medium high heat and add a small dash of oil. Once your pan is fully heated add your diced onion and garlic, cooking for around 4 minutes or until the onion turns transparent.
To the same pan add your tomato paste and your heavy cream or milk, stirring occasionally until the pasta is cooked.
Once your pasta is cooked al dente and drained to remove any excess water, add it to the sauce, stirring until all of the pasta is coated evenly. (See tip 2)
Take your pan off the heat and dish up your pasta, topping with fresh basil, crumbled feta, olive oil and black pepper to taste.
